Construction and Materials
In contrast to electric ovens or those made of refractory brick, the ORTNER wood-fired oven is made of so-called fire concrete. The advantage lies in its efficient heat storage capacity. The heat from the fire is absorbed and stored throughout the entire baking chamber. The stored heat is radiated and distributed evenly throughout the oven for several hours. This is the perfect prerequisite for a successful cooking result.
Stone Oven Combustion Chamber Geometry
The special combustion chamber geometry ensures even heat distribution. Initially, the air begins to heat up and circulates evenly throughout the entire baking chamber. At the same time, heat is absorbed by the storage material and, after some time, radiated back inwards. The ceramic base plate also plays a crucial role. It must store heat for as long as possible, as there is direct contact with the food here. If the base plate cools down too quickly, it can negatively affect the baking process.
