Construction and Materials
In contrast to electric ovens or those made of chamotte, the ORTNER wood-fired oven is made of so-called fire concrete. The advantage lies in its efficient storage capacity. The heat of the fire is absorbed and stored throughout the baking chamber. The stored heat is radiated and distributed evenly in the oven over several hours. The perfect prerequisite for a successful cooking result.
Combustion Chamber Geometry
The special combustion chamber geometry ensures even heat distribution. Initially, the air begins to heat up and circulates evenly throughout the entire baking chamber. At the same time, heat is absorbed by the storage material and radiated back inwards after some time. The ceramic base plate also plays a crucial role. This must store heat for as long as possible, as it is in direct contact with the food. If the base plate cools down too quickly, this can negatively affect the baking process.
