Ortner HBO 0 Tunnel Narrow Oven Kit – compact, efficient & easy to assemble for perfect bread, pizza & more from a traditional wood-fired oven. ORTNER offers wood-fired oven kits made from their high-quality cast fireclay in five different size models. Whether for private or commercial use, there's something for everyone. A special feature is the inner surface of the baking chamber, which, due to indentations, gains a larger surface area and can therefore radiate more heat.

Construction and Materials
In contrast to electric ovens or those made of fireclay, the ORTNER wood-fired oven is made from what is known as refractory concrete. The advantage lies in its efficient storage capacity. The heat from the fire is absorbed and stored throughout the entire baking chamber. The stored heat is radiated and distributed evenly in the oven over several hours. The perfect prerequisite for a successful cooking result.
Combustion Chamber Geometry
The special combustion chamber geometry ensures even heat distribution. Initially, the air begins to heat up and circulates evenly throughout the entire baking chamber. At the same time, heat is absorbed by the storage material and radiated back inwards after some time. The ceramic sole plate also plays an essential role. This must store heat for as long as possible, as there is direct contact with the food. If the sole plate cools down too quickly, this can negatively affect the baking process.
